Named as one of Sydney's 'most visionary young talents' when he was working there, the passion for food hit English-born Daryll Taylor at the very young age of 3, when he started cooking with his Great-Grandma. No surprise then that he had his own vegetable and fruit garden by the age of 6.

Sebastian Snow is Head Chef at Southrop’s immensely pretty pub, The Swan at Southrop, the Good Food Guide's 2010 UK Restaurant of the Year, which he runs with his wife Lana.  Enthusiastic about the fantastic produce he can source locally, he prides himself working closely with local producers as much as he can.  

Garden Designer

Bunny Guinness is a passionate and active gardener, designer, landscape architect and author. As one of this country’s leading designers, she has been a regular Radio 4 Gardeners’ Question Time Panellist for eleven years and writes a weekly column for the Sunday Telegraph.

Guest Chef

Chef/patron, ‘Made by Bob’, Cirencester, Gloucestershire. Bob was previously head chef at The Swan at Southrop, and has also worked in London at Sir Terence Conran’s famous Bibendum restaurant under Simon Hopkinson and at Nahm with Australian chef and internationally recognised Thai food master, David Thompson (who describes Bob as “a fantastic chef”).

Sarah Ryley is one of Thyme’s ‘ones to watch’. A self-taught chef and cookery teacher who creates totally fresh cuisine, Sarah brings together the sentiment and all the finest flavours of home made food. Original and sophisticated menus are interpreted into generous and delicious dishes with bold rustic appeal.

A hands-on cooking class with a healthy & delicious early Autumn feast in Thyme’s Tithe Barn. In this full-day class, the incredibly talented chef, Sarah Ryley, will share her passion for cooking and eating carefully sourced, nutritious and delicious food as she teaches us how to cook a three course menu for Autumn, tantalising our taste buds.

On this day’s course, Sebastian Snow, the award-winning chef of The Swan at Southrop teaches you how to buy fish, prepare it (gutting, scaling, filleting) and cook it, using a variety of methods, including stir-frying, braising, steaming and grilling.

A hands-on cooking class followed by a classic yet simple Thai meal of dishes made on the day with ‘Made by Bob’ Parkinson. The food and cooking of Thailand is considered to be one of the most ancient and refined of the world’s cuisines.

We will show you some age old techniques to preserve, pickle and pot some of the distinctive flavours of autumn, helping you to build a home produced larder to enjoy throughout the winter to include rosehip syrup, chutney and jellies. We will also include some warming autumnal dishes to inspire you, to include Southrop lamb, quince, walnuts and cake.

What's in? Pears, autumn lamb, quince, elderberries, walnuts, mackerel, pumpkin, Jerusalem artichokes, figs, apples, duck, crab, kale, butternut squash, wild mushrooms, hips.........
