Chef, Ethno-botanist, Forager

Claudio Bincoletto is an Italian chef, ethnobotanist and expert on wild food.  Originally from Fossolta di Piave near Venice, Claudio began collecting herbs for local herbalists and restaurants as a child.

While he later trained as a chef, it was during Claudio’s National Service with the Italian Army that he was selected for special training as forager so that he could feed the troops in whatever terrain they found themselves. Following his return to civilian life, Claudio studied agronomy, with a particular interest in biodynamic farming methods, an interest that he continues to apply in the ongoing management of the small herb farm which he continues to run with his mother and sister near Venice and in the work that he does for organisations such as Diversity for Life (http://diversityforlife.org/category/artists-and-chefs). Whatever the season and wherever he is, Claudio will always able to find something to eat and share with others.
Garden Designer

Bunny Guinness is a passionate and active gardener, designer, landscape architect and author. As one of this country’s leading designers, she has been a regular Radio 4 Gardeners’ Question Time Panellist for eleven years and writes a weekly column for the Sunday Telegraph.

Chef and Author

Chef and author Maria Elia learned to cook in her family’s Greek restaurant where her palate was honed from an early age. Born in Richmond in Surrey, she eventually left home to explore the world, on a mission to seek out distinctive flavours and textures along the way, during which time she also spent a summer working with culinary maestro, Ferran Adria at El Bulli, in Girona, Spain.

Botanist

Pippa has presented numerous gardening programmes for the BBC including: Gardeners’ World (for 13 years); Gardeners’ Question Time; Growing Science; Pippa’s Pests and Top Soil with Pippa Greenwood. For several years, Pippa also worked with The Royal Horticultural Society at their garden in Wisley, where she ran the Plant Pathology department and gardening advice desk.

Designer

William has a worldwide reputation for designing collections for the home, which include tableware, William Yeoward crystal, furniture, lighting, linens and other accessories. He is particularly known for his entertaining and imaginative table settings and has written various books on the subject. He has stores in London and New York.   

Broadcaster, gardener, cook

Former BBC Tomorrow’s World presenter, Judith Hann, made her beautiful walled herb garden from a derelict pig yard on her small farm of 40 acres in the Cotswolds. Her garden contains more than 100 different varieties of edible herbs.  She also writes a column on culinary herbs in the Herb Society magazine and was one of Rick Stein’s 'Food Heroes' on his TV series.

Thyme's farming advisor, Charles started farming in the Cotswolds in 1976 at Macaroni Farm, which has been in his family since the late 1800’s.

Leonie McIntosh raises outstanding free-ranging, naturally-fed chickens on Great Farm in the Cotswolds.  Leonie’s love of poultry and animals in general began on her family’s farm in Ireland.  She was vegetarian for many years, and her concern for animal health and welfare informs everything she does on the farm. 

Wine & Cheese Expert

Erica owns and manages the highly acclaimed Allium restaurant in Fairford, Gloucestershire with her husband James Graham.  Erica is in charge of the wine list and cheeseboard, which is well known for its vast array of British only cheeses, and has been awarded Restaurant British Cheeseboard of the year in 2006 & 2007, as well as UK Cheeseboard of the Year 2008 at the British Cheese Awards.
