Chef, ethno-botanist, forager

Claudio Bincoletto is an Italian chef, ethno-botanist and expert on wild food, taking our foraging classes, as well as our Italian Charcuterie class.  Originally from Fossolta di Piave near Venice, Claudio began collecting herbs for local herbalists and restaurants as a child.

Garden Designer

Bunny Guinness is a passionate and active gardener, designer, landscape architect and author. As one of this country’s leading designers, she has been a regular Radio 4 Gardeners’ Question Time Panellist for eleven years and writes a weekly column for the Sunday Telegraph.

Chef and Author

Chef and author Maria Elia learned to cook in her family’s Greek restaurant where her palate was honed from an early age. Born in Richmond in Surrey, she eventually left home to explore the world, on a mission to seek out distinctive flavours and textures along the way, during which time she also spent a summer working with culinary maestro, Ferran Adria at El Bulli, in Girona, Spain.

Farmer

Thyme's farming advisor, Charles started farming in the Cotswolds in 1976 at Macaroni Farm, which has been in his family since the late 1800’s. 

Seeds of Italy

Paolo Arrigo is the founder of Seeds of Italy and author of 'From Seed to Plate'.  He was bought up in the Italian way, in the garden, in the kitchen and at the table.  He shares his immense knowledge of how to sow and grow beautiful vegetables and the amazing diversity of seeds available to him through Seeds of Italy in his master classes at Thyme

Designer

William has a worldwide reputation for designing collections for the home, which include tableware, William Yeoward crystal, furniture, lighting, linens and other accessories. He is particularly known for his entertaining and imaginative table settings and has written various books on the subject. He has stores in London and New York.   

Farmer

Leonie McIntosh raises outstanding free-ranging, naturally-fed chickens on Great Farm in the Cotswolds.  Leonie’s love of poultry and animals in general began on her family’s farm in Ireland.  She was vegetarian for many years, and her concern for animal health and welfare informs everything she does on the farm.
