Until foxes killed most of the hens in Caryn Hibbert’s flock of White Silkies, French Maran, Exchequer Leghorn and assorted bantams, we were only going to use Southrop eggs. While we will be using eggs from the few hens that survived, we’re also using some from no further than a few miles further along the road:
15 year old Jack has been raising egg laying hens since he was six years old, inspired by his Aunt and Uncle who produce free range eggs for sale locally. Naturally free to roam and forage outdoors, Jack’s Cotswold Legbar eggs have beautiful bright yellow yolks and are simply delicious.
Charles Martell started making his Double Gloucester Cheese the traditional way with milk from his cows on his farm near Dymock in the 1970s in order to save the Gloucester cattle from extinction (there were only 45 animals left in 1974). Fresh organic milk from ‘the girls’ (the Friesian cows) at Kirkham Farm is taken to the creamery each morning, where it is lovingly turned into a new batch of cheese. Made from 100% cow’s milk, the cheese is traditionally made and is available in three different varieties: Organic Cotswold Brie, Organic Cotswold Blue-Veined Brie and Organic Cotswold Herb Brie.

Ceri’s family has farmed at Hill End Farm since 1910, where she is now the 5th generation cheesemaker in her family and currently North Wiltshire's only cheese maker. She uses milk from her own herd of Pedigree British Frisians, grazing the traditional pastures of the Dauntsey Vale.
